Favorite Weeknight Recipes
I don't know about you guys, but it can get a little crazy around our house during the week. My shifts are typically 7am to 7pm and that makes for some late night dinners on days I'm working. I wanted to share some tried and true staples that are lifesavers for us when life gets busy.
Raise your hand if you love Skinny Taste?! Gina is a genius and helps women (and men!) worldwide to create easy, healthy meals with options that can work for just about any dietary need. She has recipes for everyone including: vegetarian, gluten free, slow cooker, dairy free, and meals that take less than 30 minutes to throw together - just to name a few. This salsa chicken is a big hit for Girls Night In & can be great for lunches the next day! It's also Anthony approved so that is a win in my book!
If you haven't already heard of Brittany's blog, Eating Bird Food, I would definitely check it out! She is a food blogger, health coach and personal trainer extraordinaire. This One Pan Roasted Chicken dinner is a game changer & makes me feel like I have actual kitchen skills (Fake it till you make it, right?) The only thing I love more than an easy dinner, is easy clean up!! In addition to Brittnay's great take on weeknight meals, she also has an amazing series of Meal Prep salads, including this one, this one, and this one. These salads, packed in mason jars, are perfect for easy weekday, work friendly lunches on the go.
If you know me at all, you know I'm a Tone It Up girl (#tiugirl). Ok, true confessions, I have the biggest girl crush on K&K (Karena and Katrina, the Tone It Up founders). As a Nutrition Plan member, I have access to a bunch of easy, colorful recipes but the good news is that they share a bunch of these recipes on their website (here!) or on Pinterest (here!) too. This Black Bean Chili is a crowd pleaser and while I'm not a vegetarian, its sometimes nice to have some go-to meat-free meals to mix it up! Also, if you're looking to switch up your workout routine, I'm a big fan of their videos!!
